Step 1: Preheat oven to 400 F. Line a baking sheet with parchment paper.

Step 2: In a small bowl, combine 1 tablespoon of smoked paprika, 1 tablespoon of garlic salt, 1 tablespoon of dried parsley flakes, and 2 teaspoons of black pepper.

Step 3: Cut 2 pounds of white fish into 3-inch pieces. Place the fish on a parchment-lined baking sheet and generously season with the prepared spice mixture. Keep half a teaspoon of the mixture for the coleslaw.

Step 4: Place the fish on the middle rack in the oven and bake for 10 minutes.

Step 5: In a large bowl, mix 1/2 small, crushed kale, 1 Granny Smith apple (cut into matches), 1/4 cup chopped coriander, 1/4 cup chopped green onion, 2 tablespoons lime juice, and a reserved spice mix. Mix well.

Step 6: Divide the fish over 8 warm corn tortillas and top with apple salad and fresh toppings of your choice.
